Waffles
Makes 8
3 eggs, separated
1½ cups milk
100 g butter, melted
2 tablespoons caster sugar
'2 cups self-raising flour
I teaspoon vanilla
oil spray or extra butter for greasing waffle iron
In a food processor or large bowl mix egg yolks, milk, melted butter, sugar,
flour and vanilla. Mix to a smooth batter: In a separate bowl beat egg whites
until stiff peaks form, then fold carefully into the batter.
Oil spray or brush a heated waffle iron with melted butter, spoon in 2-
tablespoons of batter and cook until the waffles are crisp and golden brown.
Serve warm with whipped cream, maple syrup, fresh fruit and crispy bacon.
