Potato Gnocchi

These guys make really good-looking gnocchi. You don't need no fancy gnocchi board, just a fork.
Ingredients
- 1kg potatoes (old starchy bois - Agria is ideal)
- Salt
- Cornstarch 50g or so
- Parmigiano Reggiano 30g
- 1 egg yolk
Preparation
- Roast the potatoes for 40 mins or so in their skins - ideally cooking on a bed of rock salt to absorb the moisture
- When the potatoes have cooled for 10 mins or so, peel them and put them through the ricer twice.
- Lay out the potato mix flattish and add some of the cornflour, the egg yolk, the parmesan and a twist of salt
- Combine using a dough spatula and then knead lightly to combine. Don't over-knead.
- Roll up little balls and spread them over the back of a fork and then fold back over themselves. Voila!
Cook them in your preferred tomato sauce, ragu, baked in the oven etc.
