Weeeow: update - we bought a proper pizza oven from Gozney. Their beginners dough recipe is great. Works everytime, much stronger, lighter and better dough that you've ever been able to produce previously.
Basic dough:
- 1kg high-grade flour (italian 00)
- 600ml warm water
- 2g active yeast
- 30g salt
Talking to Tim H at work he makes a good dough - some tips from him:
- 1kg Flour - some Maori brand from Moore Wilsons
- 700ml warm water
- 10g active yeast
- 10g salt
- 2 tbsp olive oil
- 1 tbsp sugar/honey
Also, he kneads it and then balls it and then raises it in the fridge overnight. Basically a 24hr dough. Worth giving that a try eh.
