Mike's Meatballs
Meatball ingredients: 500 grams beef mince 500 grams pork mince 4 cloves garlic 3/4 cup Parmesan 1 + 1/4 cups panko crumbs 2 eggs 2 tsp salt Some pepper 1/2 tsp Chilli pepper flakes 1 cup Ricotta
Sauce ingredients: 1/4 cup olive oil 1/4 tsp chilli flakes Single anchovie 5 cloves of garlic 2 x cans whole peeled tomatoes 1 tsp brown sugar
Garnish with more basil and parsley if you like
Method (to the madness): Combine meatball ingredients. Form into balls Bake on a tray for 20 mins at 200 c
Thinly slice garlic and fry in oil but don’t burn Le Garlic. Add tomatoes and herbs and simmer for 20-30 mins
Cook pasta. Combine. Eats. Put spare balls in the fridge.
