Chicken Patties

500g minced chicken

1 teaspoon finely chopped

fresh garlic

1 teaspoon finely chopped

tresh ginger

⅓ cup finely chopped spring onions

¼ cup julienned pickled ginger

1½ tablespoons light soy sauce

1 teaspoon sesame oil pinch of white pepper

1 teaspoon flaky sea salt

To cook and serve

Buffalo ranch coleslaw

cooking oil for brushing

sea salt and freshly ground black pepper

4 brioche burger buns, split

Makes

Place all the ingredients in a bowl and, with clean hands, mix to combine. Form into 6 patties then refrigerate until required.

Heat your chargrill or flat-top to super-hot. Brush the patties with oil then season with sea salt and black pepper. Cook thoroughly until juices run clear and lightly toast the buns as you go.

To serve: Toasted bun base, chicken pattie, Buffalo slaw then the bun top. Guilt-free eating pleasure! Serves 4
