Dad's Nachos

Dad’s Nachos is the cheaper nachos option compared to Chelsea Winter’s for example. It’s faster and easier. But probably not as good for you. Who cares. Serves 4

Ingredients:

1 courgette

1 red onion half diced

2 cloves garlic thinly sliced

2 tbsp olive oil

1 half yellow/green capsicum

500 grams prime or normal mince

1 can chilli beans (campfire if u like)

2 tbsp tomato paste

1 tsp ground cumin

1/4 tsp chilli flakes - more if you like

1 cup tasty cheese

1 big bag of corn chips

Sour cream

Coriander handful

Optional mashed avocado if available

Preparation:

  1. Halve longways and thinly slice the courgette and fry it in the olive oil on medium till it starts to soften up - about 5-7 mins. Add the diced onion and sliced garlic and cook for another 5 mins. Finally add the diced capsicum half and cook for a further 5 mins.
  2. Add the mince and break it up. Cook it till it’s no longer pink and just starting to brown. Then sprinkle the chilli flakes and ground cumin on it and mix it in.
  3. Add the can of chilli beans and tomato paste and mix while still cooking
  4. While that stuff is still cooking, divide the corn chips evenly onto 4 plates. I like to make them into outer rings so the nacho mix can go in the middle. Sprinkle a little grated cheese onto the chips and microwave each plate for 20-30 seconds so the cheese melts.
  5. Serve 1/4 of the nacho mix onto each plate and top with the coriander, avocado and sour cream. Add hot sauce of your choosing on top and more grated cheese if you like.
