OMG

Tostada shells are fried soft corn tortillas. Hmmm where to find those me wonders

Ok so here's what it is essentially:

Ingredients

  • mince - maybe 400-500 grams?
  • chilli
  • cumin
  • parprika [smoked if you like]
  • salt + pepper
  • tomato paste
  • big flour tortillas
  • grated mozarella pizza cheese
  • tomatoes
  • chopped lettuce
  • sour cream
  • corn chips
  • salsa (spread it on the top or dip it with the sour cream)

Preparation

  1. Cook the mince and season with the spices and some tomato paste
  2. On a big flour tortilla - cut out a bread&butter plate sized centre section. Sadly you get to discard the outer bits. Keep that inner piece - that will form the lid of the folded over crunchwrap
  3. Onto the middle of a new large tortilla, spread:
  4. mince
  5. cheese [go for mozarella I say
  6. then ideally a tostada, but corn chips if no tostada is avails
  7. sour cream
  8. chopped lettuce
  9. tomatoes

  10. more cheese if you like or sauces

  11. On goes the lid

  12. fold the edges up and around in sections and then fry upside down [you can maybe use toothpicks to hold it together] in a little oil in the pan.
  13. 5 mins per side [till crispy golden]
  14. eats.
