Buttermilk deep fried chicken

ingredients roughly speaking:
Batter:
- 2 cups of buttermilk
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp cayenne pepper
Dressing
- 1 1/2 cups plain greek yoghurt
- 3 tbsp dill
- 1 tsp garlic powder
- 1/4 cup parmesan finely grated
- 2 tbsp lemon juice
Coating:
- 2 cups flour
- 1 tbsp salt
- 2 tsp black pepper
- 1 tbsp garlic powder

oil for frying - use Peanut, sunflower, or canola oil.
- burger buns
- lettuce+ tomato
Preparation:
- Combine batter ingredients in a bowl.
- Place chicken thighs in there and refrigerate for 12 hours.
- This has the effect of breaking down some critical element of the meat and making it awesome. Actually it’s the lactic acid in the buttermilk that does the thing.
Dressing:
- Combine ingredients in a bowl, mix and refrigerate for 1 hour.
Coating:
- Coat chicken thighs in powder coat and get ready for scar tissue.
- Frying: Heat the oil to 375F and then put chicken in. This will lower it to 350F which is about right. Use a thermometer.
